Calcots Onions
Grower: Crows Pass
Description: The Calcot onion is not a specific variety, but is rather produced by a traditional Spanish process. This process begins with the sweet Temecula Honey onion, a Valdivia variety, which is saved from the previous season and replanted in the late summer. Now, the plant is mounded and produces long green onion stems, known as the Calcot onion. This Calcot onion is longer than other green onion varieties and offers a juicer consistency with a sweet flavor. The Calcot onion is a great way to enjoy a fresh onion in the winter.
